The power, or output stage takes the preamp signal
and amplifies it to a level high enough to send it through the output
transformer and to the speakers.
If you want a lot of 'headroom', ie. an overengineered amp that gives
you an excellent clean sound up to performance volume levels choose a
50 or preferably a 100 Watt output stage. If you are playing in small
venues and want a warm or overdriven sound go for a 25Watt amp. If
you are playing at home and want a good overdrive tone and clean sound
without annoying the neighbours, don't go higher than a 20Watt amp - maybe
think about a Tiny Tone Amp instead.
